They say cooking is the most ephemeral of arts because it disappears the moment it is tasted. Yet what we experienced last week at Etéreo has left a mark that goes far beyond the last bite. The Mexican Days with Lucy Noriega were not just dinners; they were a celebration of friendship, culture and respect for the produce.

We can still feel in the dining room the buzz of those “full house” nights, when the murmur of the guests mingled with the frantic, passionate rhythm of four-handed cooking.

What we witnessed at the stoves was a genuine masterclass in understanding. Watching Pedro Nel and Lucy Noriega work together confirmed that, where there is passion, there is no distance.

Lucy did not simply bring Mexican recipes; she brought her soul. She gave us the depth of her moles, the joy of her aguachiles and that ancestral wisdom she handles with such elegance. But the real magic came from seeing how those intense Mexican flavours embraced our local Canarian produce. The fresh fish from our shores, the vegetables from our land… everything took on a new life under Lucy’s eye.

They were days of surprising textures, of a heat that did not attack but caressed, and of colours that lit up our tables. Those lucky enough to join us witnessed a truly unique culinary dialogue.
